this is because...

in conversational french, questions are usually formed with est-ce que. however when the subject of the sentence is a pronoun, french speakers often use a INVERSION. the f0rm ur talking about in ur question is called an inversion. its always the verb first, then the subject pronoun.

in "parlez-vous francais", parlez is the verb, vous in the pronoun. the leftover(haha) is francais, so it comes after the verb and pronoun. thats the reason vous follows parlez and is seperated by a hyphen

"Do you speak french?". Literally "speak you french". if it was you speak french it would have been written vous parlez francais. The question form reverses the pronoun and verb. Have you heard the term voulez-vous coucher avec moi ce soir Moulin Rouge)? A further example of operational french.
