Within one second of a winner being announced at the Oscars, the orchestra starts up the theme music from that movie. The orchestra must have a little advance notice of who the winner is so they can be prepared to play that song right away. That would mean the winner of each award isn't as big a secret as the academy would have us believe.

I'm guessing that during their lengthy rehearsals prior to the actual ceremony, the orchestra has learned every song necessary for every winner, and that a simple mention in the earpiece to the maestro would indicate what to play. I'm pretty sure that security is way too tight to tell anyone in advance.
