I am a General Manager of a restaurant so I see many differences in the food products we buy and what is sold at consumer retail stores, .Air, time and temperature can adversely affect lettuce. We get our salad mix in vacuum sealed bags- They are kept at 36F or lower.The servers make 75-150 salads starting about an hour before we open. Once the salads are made they are also kept at 36F or better. Just about all of the salads are served within 3 hours .This leaves little time for the lettuce to begin to wilt before it is consumed. You may want to try the salad mix in your grocer's produce section rather than using a head of lettuce. Here's what I do: about an hour or so before serving, cut or tear your lettuce into bite sizes. Rinse it well in cold water. Then put it in a salad spinner and spin off as much water as you can (it's still going to be wet). Put the salad in a bowl in the refrigerator until you're ready to serve it (no longer than four hours).

Nice and crispy... and you know it's clean and pretty. It takes in a little water from the bath and that's where the "crisp" comes from.

My best guess would be you had imported lettuce from Russia which is known as Gorky Lettuce. Russian scientists have worked on introding iceberg lettuce to the fertile ground in Gorky Park. This is also the same acidic soil that produces the Vodka, the Russians are famous for

Keep the lettuce in ice water . (or at least 1/2 hr before serving)

the lettuce is kept covered with a towel with ice on top of it. try it. it works.

Kept in the fridge in the crisper.And washed it in ice cold water.

sometimes people put secret ingredients in their food to make it not taste like anywhere else you can get from. they do that so that if people say that it was good, they would come back for more.
