the shrimp pellets seem to be very messy and most of it just settles into the gravel, i also feed them sinking algae disks, but i dont feel like they are satified with just this, they may occasional get some flake fish food but that is mostly eaten before reaching the bottom

As omnivorous feeders, Cory Catfish should be fed foods such as blood worms, sinking tablets or finely-chopped beef heart.

Vegetable matter such as blanched lettuce should also be supplied in their regular diet. It is not recommended to leave your Corydoras to simply eat the leftover "scraps". It is nice to see that you care for them and remember feeding them specifically.

Try putting in MORE flakes in the tank, just for them, and put them under the water, nearer to the bottom for a few seconds before releasing them.

Bottomdweller tablets aren't a messy as they seem, especially if there's a bunch of shrimp or other scavengers in the tank to clear the leftover food up or a good filter.

Another way is to make some "tablets" out of pellet food or flakes by taking a bunch , wetting them and squeezing them together. If the pellets aren't the type that are supposed to float for a long time, the "tablets" should sink.

If you have floating pellets, you can smear them across the inside of the aquarium. It works, I've tried it.

Try frozen blood worm cubes, they sink right to the bottom and nothing will be left behind. I have heard about people feeding them slightly cooked spinach too.
