You can absolutely change tracks if you drive stick. You do not have to keep your hands on the stick all the time except when you want to shift gears...

You should only put your hand on the shifter while you are shifting. The rest of the time, it is for changing tracks, adjusting mirrors, playing with the ashtray...oh yeah, and steering the car.

i have had a stick my past i don't know how many vehicles. after a while u can talk on ur cell phone, eat a hamburger, use a yo-yo and tie ur shoes while driving a stick.
obviously i'm exaggerating, but it's not as hard as u think. just remember: when in doubt, hammer on the clutch or put it in neutral.
