Probably lots of different ways. There's some evidence that dogs can have the understood vocaulary of toddlers, but other animals might just go by vocal inflections, the look on someone's face, or just the sound of the owner's voice. I had a deaf kitty who knew I was calling her when I motioned to her with my hand or tapped the floor. Animals just learn to respond to cues from their humans, and vocal ones are used most often.

Animals learn by repeating phrases and the tone of your voice. They understand and hear just like humans do although they process thing differently. Animals are actually very intelligent and aren't given enough credit.

they learn their name. the name that is associated to them.
whenever we call them, by name, they identify it as you wanting them, because as you taught them, you would praise, feed, play with them. so they know the name is them and it means something will happen. they also get to know our habits, and so they know when it is dinner time, so the call will be for that. etc
just like children know when they are being called. they learn their name first, then event labels are attached to the other words.

They can hear, they have ears. Oh, you mean how can they understand the squealing, grunting noise you make as their name? Possibly because when you make that noise, they get a reward(food). That is how you learned your name when you were a runt.

Well, they *know* when we call them because they can *hear* us calling them and they have learned their names.
If well trained they will come to you when called without reservations...
If they are not trained then they will come only if they feel like it...
They *know* this because they are intelligent... lol
