Is this question for real? Well, most castles I know of are pretty ancient... So I would think a major thing would be modern day conveniences. Plumbing, electricity, heating/cooling. Most castles are pretty big sompared to an average house. And any changes you make would probably lead to some major over haul that might or might not be worth the effort, money or time!

Drafty, cold, neighbors always storming us, not to mention the high cost of boiling oil. Actually, for the time period of the Middle Ages, it beat living in the scummy huts the poor had.

COLD and upkeep costs a fortune. Unless you rent them for 10 grand a weekend like some stars I know.

You have to deal with animal rights groups to keep your moat stocked with alligators & pirahannas.
Plus, you get "rooked" every time God has you change places with his king, to better protect him.
