white meat is muscle that is not exercised
dark meat is muscle that is moved and has a lot of myoglobin.
most people do not exercise all of their muscles the same - legs more than arms - hence the mixture of white and dark meat

We have both types of "meat." Red meat would be the muscles we use in standing and holding a posture (slow muscles). Most of the these are in the legs. The white meat are muscles used in rapid exercise, also in the legs, and in the arms especially. The distinction isn't always clear.

If you were to cook it, then no, definitely not like the muscle of a chicken's breast. I'd say darker-colored meat like that on a cow or pig, though the fat globs are pale yellow (like on a chicken). I took gross anatomy in college. This is but my opinion.
This is what an article on the web reads (in part):
Muscles have evolved differently. Muscles of the breasts, middle back, etc. are dominated by fast-contracting muscle. Thighs and other leg muscles, for example, are predominately slow-contracting muscles. Muscles require energy in order to operate. Energy for the fast-contracting muscles comes from glycogen, a carbohydrate in the form of glucose. The slow-contracting muscles' fuel comes from fat. So in short, muscle (meat on the more-energetic upper arms and legs) is generally darker because it has more fat overlying it; and, too, the darker-colored meat gets its color from myoglobin, which plays a key role in transporting oxygen and shows up in the muscles that an animal or person uses most often.
