i have a 2001 jeep cherokee sport and i was wondering if gearing made that much of a difference if so what gear should it be put in while off road?

The proper use of gears in off-roading is important. Your selection will be based on the roughness/steepness of the terrain and the most practical speed to travel at.

Manually select the gear that will give you mid range RPM (2,500 -3,000 RPM) for the terrain and speed. This will allow you to develop the maximum power to the drive train. If you encounter a particularly steep or rough section, shift down a gear and slow up.
