I know people keep these in small unfiltered tanks, so could I put these in a 10 gallon with just sand or gravel and fake plants?
How many?

Ghost Shrimp can live in fish bowls and aquariums with and without an aquarium heater at a temperature between 65 and 82 degrees F. It is good if you can have a air bubble running so that the water does not lacks oxygen. 10 gallon will hold a dozen very easily and keep them confortable.

Every few months a Ghost Shrimp molts its exoskeleton. When this happens, it's soft body is exposed, and it's vulnerable to being eaten. You can protect your Ghost Shrimp by putting a piece of a broken flower pot on the bottom of your Ghost Shrimp's home to form a small hiding place for the Shrimp. Put the piece of the broken flower pot with it's inside facing down on the bottom of your Shrimp's home, so there is a small cave for your Shrimp to crawl under.

Ghost shrimp are very easy to keep, and are a blast to watch. You can easily keep around 20 in a ten gallon tank. It would be best to have a small sponge filter at least. There aren't really aquatics that you can keep without filtration. Even bettas should have a filter contrary to popular belief. You won't need a very powerful filter if you are planning on just keeping the ghost shrimp, but you should use one none the less. Good luck and have fun with them. I enjoy mine.

Yes. You will still have to do tank cleanings because ghosts will add to the bio load. You'll also have to feed them daily. I would limit how many you put in any tank by themselves, especially without live plants--maybe 10-20 max. A sponge filter will help provide bio-filtering but you still need to do weekly water changes and general tank cleanups so the nitrites/ammonia stay at zero.
