I am a gourmet cook however for a romantic evening I would keep it simple because the focus should be the romance.
I would saute a filet mignon or small pepper steak with a little red wine. I would grill a piece of baguette and then serve the steak and some sauteed mushrooms on top of the toasted baguette. Top that with a little swiss cheese and then broil just until melted. Serve with a small salad of assorted greens dressed lightly with a good vinaigrette. Serve with a robust burgandy wine.
Dessert would be a good quality ice cream...(perhaps Haagen Daaz vanilla). Place a scoop in a crystal goblet. Top with a little of your favourite liqueur ( I like creme de menthe or cointreau)
Finish up with a good expresso or cafe au lait. I would likely play some latin jazz; some Stan Getz or Antonio Carlos Jobim.

This is my favorite thing to make. It's like being on vacation for me with all the different flavors.
Main entree-Carribean Jerk chicken breasts, homemade mashed potatoes or pasta, and a vegetable ( I like corn)
Drinks-if you want alcohol but something a little different, try captain morgans parrot bay rum (I like the pina colada) and mix it with ginger ale or cola.
Side dish-any kind of soup or salad is the best side dish so you have room for the main entree
Dessert-My favorite, chocolate marble cheesecake with raspberry sauce
Music-I can't help you there, it's a matter of opinion. But I think the best romantic music is oldies or blues or jazz

Entree - Lobster, twice baked potato, a nice salad with vinaigrette and some of the more rare lettuces.... radicchio, frisee, sweet butter, something besides ice burg or romaine.
Drink - a wine that complements the seafood or whatever other dinner you choose.... or I prefer iced water.
Side dish - see above.
Dessert - Baked Alaska or Tira Misu
Music - Luther Vandross, Anita Baker, or Barry White. Or, a nice instrumental jazz such as spyro gyra.

Just make something light for dinner... You don't feel like doing much when you are really full. Chocolate Moose is a really good dessert ...if you could make that I think there would be some major brownie points and lots of something else too ;)

Lobster Thermador, Champagne, Ceasar Salad as an appetizer, Vanilla ice cream topped with chocolate syrup and a cherry, and of course for the music, well, you have to decide that one.
Or just take her out to Red Lobster and then to your bedroom for desert

dessert well lets see cherry or strawberry cheese cake you could always feed her the strawberry's
Drinks well lets see white wine.
Music would say something without singing just an instrument CD.
