Tough call, but there are a few I particularly like:
Shostakovich's 5th Symphony
Beethoven's 4th Piano Concerto
Stravinsky's Rite of Spring
Copeland's Fanfare for the Common Man, Appalachian Spring
(Technically, 1,3 and 4 are not "Classical" in the strict sense of the term, but I'm assuming you were asking in the context of symphonic music).

It's hard to pick one, there are so many beautiful pieces. But if I had to choose, I'd have to say Pachelbel's Canon in D major. I've heard it so many times and I've heard so many variations, but it has some lasting memories attached to it for me. It was the first solo I led in orchestra as a 1st violinist, and once I learned it on guitar I've played it at a couple of weddings and at my gf's voice recital as an intermission piece. Simple structure, simple melodies and harmonies, but such a beautiful piece. Sometimes less is more...

I like lots of classical pieces, but at the moment my favorites are "Piano Sonatina I - III" (aka - "Sonatine") and "Miroirs - IV. Alborada Del Gracioso" by Maurice Ravel. Great piano pieces.

I don't much care for classical music and most of the people who listen to it are pretentious and obtuse, besides they can hardly tell the difference between a concerto and a root beer. I guess there is something to be said of Tchaikovsky's "Nutcracker" it always put me in the Christmas spirit
