I need a diagram, or a theory, or something that explains why we love. Not what love is, but why. Also, what are the different stages of a love relationship?

You could look to evolution as a why. Love (that is pair-bonding of male & female) made certain humans procreate. And love bonds a family and also a clan which helps those humans compete well in there environment. Harder to survive if you don't have a cooperating group.
In my opinion, these are the stages:
1) Meeting: The people see each other and the impression matches with their archetypal image of the ideal mate.
2) Get to know each other: Dating, meet family and friends
3) Commitment: Decide to be together
4) Mature relationship: Reap the benefits of supporting each other, hopefully until death parts them.
