Handshake :

Term used to describe the process of one computer establishing a connection with another computer or device.

The handshake is often the steps of verifying the connection, the speed, and/or the authorization of the computer trying to connect to it.

An example of handshaking is when a modem connects to another modem; the tones heard after the dialing is the handshake and can be thought of as the computers greeting each other.

Handshaking in computer terms has to do with asynchronous communications (as opposed to synchronous communications). Usually in the form of an originator and an answerer. For example fax/modem protocols specify:
1) Originator dials the phone number of the answerer
2) answerer will answer using a certain tone (frequency)
3) originator will respond with a different tone
4) other exchanges may take place to agree on a transfer rate or transfer type.
5) Once all is agreed, communication can take place

That's just one example in simple terms, I think you get the idea.

A handshake is an exchange between two computers to establis the best way for them to talk to each other, it is agreeing on a set of terms like Protocol, speed and language. This is what you hear when a MODEM connects to an ISP or other device.

Handshake is a part of data flow control, often used in data communication. If two computers talk to each other, they do a communication to determine, if they both talk the same protocol and speed and understand each other. This procedure is called handshake.

The term handshake used in IT is normally a reference to two or more systems communicating or exchanging data. Thats the rough of it. I'm sure you could drill down further and get very technical.
