I am about to rip out my old coal fired Rayburn (AGA), which vents directly into the chimney of my house, and replace it with a modern electric cooker. I want to fit an extractor hood above my new cooker but it will be a long way from any outside walls - can I hook up the extractor fab to my chimney?

I agree with Frozen - you can't share the chimney with any other appliance. Make sure the chimney flue size is sufficient for the fan cfm. Make sure the chimney flue is clean. And install the duct from the fan to the chimney at a slope up toward the chimney - I'd say at least a 30 degree slope.

Not if the chimney is used by anything else such as a furnace, water heater or fireplace.
