New York Strip (KC Strip, and named after so many other towns) is currently the most popular cut of steaks.

My answer comes from personal experience from cooking in steakhouses and upscale restaurants for the past 15 years.

Steakhouse: Sirloin, strip, filet, Prime rib, Porterhouse. If you happen to find a steakhouse that serves flat iron steaks then I see them sell almost as much sirloins.

Upscale: Filet, Prime rib, sirloin, strip, porterhouse.
