Sun Spot hit the nail on the head. Cats in the wild bury their "business" so that predators, etc., won't know that they were there. The amount of dirt and whatever else they use to cover their stuff is sufficient to mask any odor. They always dig a little hole to do their stuff in, and use the loose dirt (or for domestics, litter) to cover their stuff.
They are by nature fastidiously clean animals, and this is also just one of the things that they do to be clean.

It's an innate reaction handed down through the generations in the feline family. The reason is to mask the odor from predators and other felines. That way, nothing will pick up the scent and follow it to the "den" or "home". Cats are very secretive that way, and it's part of a survival tactic. The odor would alert other animals to the cat's presence, thus giving them away and either opening them up to attack from a predator, or alerting potential prey of their presence.

Cats are clean animals, and thats the way Almighty God created them. I just wish dogs did the same thing. Its funny that a dog can bury a bone but not his crap.

Same reason we flush, we don't want to smell it or look at it. Yuk! My cat however....sometimes gets lazy and doesn't do it, I think he and I need to have another talk.
