In writing, is this correct: " she glanced at the towering sycamore's" or is it " the towering sycamores"?

You only use an apostrophe ( ') when referring to possessives. Like if you were referring to the sycamore's something or other.

Your second choice is right... towering sycamores

sycamores - because its plural. you don't say tree's (trees) do you?
