Sheep typifies the believers and goats typifies the unbelievers.
This does not mean that real sheep will go to heaven and a real goat will go to hell. In the Bible, many examples are use to typify the actual meaning and it's important to learn these when reading the Bible. To understand the meaning of God's word is important to begin with prayer and ask the Lord to give you the wisdom to understand it. That's one reason nonbelievers have trouble understanding it.

In Matthew 25 31-46 sheep are used as a symbol of good christians and goats as uncaring unbelievers: "31 When the Son of man shall come in his glory, and all the holy angels with him, then shall he sit upon the throne of his glory:
32 And before him shall be gathered all nations: and he shall separate them one from another, as a shepherd divideth his sheep from the goats:

33 And he shall set the sheep on his right hand, but the goats on the left.

34 Then shall the King say unto them on his right hand, Come, ye blessed of my Father, inherit the kingdom prepared for you from the foundation of the world:....

Then shall he say also unto them on the left hand, Depart from me, ye cursed, into everlasting fire, prepared for the devil and his angels:"

The devil is portrayed with the horns and hooves of a goat, much like Pan and the satyrs in Greek tradition

In older traditions goats seem to be a symbol of lechery. Satyrs seem to be very lecherous characters.

Goats are more destructive creatures than sheep. When mismanaged they force fences, destroy gardens and cause deforestation by eating young trees. The story of Cain and Abel, and the currently deforested state of the middle east (in contrast to descriptions of the landscape in the OT) suggests to me that this was probably a big issue in biblical times.

Goats reach sexual maturity very young, before they are fully grown, and their mating behaviour is ...um...probably something I can't describe on this forum :-)
