They conquered it and converted them to Christian and made them adopt the language.

Depends.
If you want a good book, try Hernan Cortes's Relations (2nd letter is my favorite) He was the guy who took over Mexico.
From there, you can also try diffrent "cronistas", the Spanish who were first in America. De Las Casas was famous for defending Indian rights, and there are more.
Search under conquistadores if you want info., but keep in mind that a lot of the primary resources will probably be in Spanish.
