It'll come so far and then it kinda stops until i release my foot and then it shoots up really quickly, obviously this causes the car to fly forward! Any idea what's wrong with it?

Nope, but if it happens with a car in front of you, you're going to be charged with an accident.

So, it you're close to me, come on by and I'll have a look. If not, take it in your your mechanic and let him look, and fix the problem. Return spring? Linkage hanging up? If hydraulic, bad master or slave cylinder?

Sounds more like the clutch release bearing (throwout bearing in the US I think) is sticking on the splines or there's something hung up in the linkage.

The car can only fly forward if you have power on, otherwise the engine revs will be lower and you'll slow down.

go back to ur garage u brought the car from, it could be dangerous if its not sorted and would be covered by warranty anyways as its mechanical problem.
