I'm planning a trip to Mexico in early June and have never been. I was hoping somebody could give me advice on a place to go that is somewhat adult and has good bars/restaurants, resorts, water activities (i.e. snorkeling, parasailing), and a healthy amount of girls. I'd also like to avoid any place that's considered primarily a "family resort" but I'm also not wanting to be stuck with a bunch of drunken high school kids.

The 'girls' part of your request are the hitch.
Cancun/Cozumel. Just avoid spring break (which is drunk college girls, not HS girls). There are some killer places south of that area - but they're more for the aventure traveller and it's typically not resort-style vacationing with single available women, etc.
Water sports (ie: swimming and snorkeling) are pretty limited on the Pacific Coast due to rougher water and lower visibility than on the Caribbean coastline. Parasailing is everywhere, as is snorkeling, kayaking (etc), but again, the swimming, snorkeling and diving is better in the Carrib.
Two spots come to mind for a first trip to Mexico if you do decide to head to the Pac coast: Puerto Vallarta and Cabo. Puerto is a great beach town with lots to see and do. It's not a cruise-stop dump like Acapulco or Mazatlan and it's bigger than Zihuatanejo. Cabo is party central, but the desert is spectacular and San Jose del Cabo (down the road 10 miles) and Todos Santos (20 miles up the road) are two incredibly cool and authentic Mexican towns.
The travling population is not skewed toward gay people in Puerto. That comment is totally false.

The best place for what your are looking for is Cancun, some of the best hotels, try any of the RIU's or Golden Parnassus or any of the Oasis resorts, or Palace chains are awesome, a list of activites that are awesome are below.....You have to try the Pub Crawl when your there it's a blast....

Go to Puerto Vallarta. There you'll find all the adult fun. When you want to do the water stuff go to Bucerias which is 10 minutes from there. In case you didn't know, bucear means scuba diving so guess what you'll find at Bucerias. You'll also find a good amount of girls. There's girls there for all kinds of tastes, so go get'em.

Go to Cancun, but avoid Spring Break time. Puerto Vallarta is nice, but it does cater to the gay crowd. Cabo San Lucas is beautiful and relaxing.

in Mexico you have to go to Cancun. lots of fun plus it is close to the folloring beaches: Cozumel, Playa del Carmen (best plce ever, paradise!), or Isla Mujeres (beautiful place)
you have to go thee if you go to cancun!! and Tulum georgeos place!!!!!
you can also visit X-Caret is like a park where you can see lots of animals, beaches and you can swim with the dolphins!! (i did)
so pay attention to those places! and enjoy!!
that is if you go to the east. if you go to the west, go to Acapulco and any other beach over there that part is wonderfull also!

go to ixtapa...i loved that place, its smaller then cancun, puerto vallarta, and acapulco but i absolutely loved it there.
