My daughter did this in 5th grade. You can show how plants absorb water by taking a white carnation (flower) and putting it in a vase of water with some food coloring added. The flower will turn the color of the water. You can even split the stem of the flower down the middle with a knife (get an adult to help you) and put each half in different colored water. The flower will turn two different colors. Good Luck.

You Can try books like 101 Science projects....
Try making some working models like Elecromagnetic crane, Electroplating you can even try making various gases like Oxygen, Hydrogen etc. I Can personally help you if you want....

You can make a Terrarium and in a huge glass jar (from hard ware store,or Wal-mart), show different stages of seed growth. Use, vegetables they show more sprouts faster, and looks beautiful, seeing the seeds grow from outside of the glass.
Easy to do with jar, seeds, and soil.
