Because fats are soluble is nonpolar hydrocarbons like petroleum ether. The rest of the potato - is starch - or baked starch - is not soluble in nonpolar solvents.

And the salt is DEFINATELY not soluble in nonpolar solvent like petroleum ether.

pet ether is nonpolar. the starches are polar, and the salt is polar as well so the fats are the only nonpolar substances that can dissolve in pet ether
