We have a gut instinct about something, but then do something different. Why do we doubt ourselves?

Because we have been taught to do so. we have been taught to exercise caution, to research all possible options, weigh odds, etc, etc until we are really unsure of what we should do.
If we fail to do all of the above, and the decision turns out to be wrong, we beat ourselves up and others may look askance at us also, saying or thinking Why didn't you...
Truth is our gut CAN be wrong at times. Especially since we've done such a great job of quieting our own nagging little voices until they shut up or are drowned out by all the other stuff we've put there.

Because we are our worst critic. Don't know why but everyone always second guesses themselves.
