I will have to return to see what others say. I asked this same question in my Bible study group 2 weeks ago and no one could give me a specific answer. I know in the Bible that numbers are important. 7 and 40 are repeated often. 12 represents the 12 tribes of Israel. But I can't a significance to 5. So I don't know. Someone said just incase he needed more, maybe it was a habit that David always picked up 5 stones when he used his sling so he just automatically did the same this this time. But you are right in saying that he only needed one because God is the one that guided that stone to Goliath's forehead with strong force.

Goliath – Who He Is
The name Goliath means “great.” Goliath was a famous giant from the Philistine city of Gath. For 40 days, he openly defied the armies of Israel, challenging them to send a man out to fight him. He was killed by the shepherd boy, David, with a single shot of a stone from his sling (1 Samuel 17:4). His height was "six cubits and a span;" taking the cubit at 21 inches, that’s 10-1/2 feet tall. He had four brothers, which may be the reason David picked up five stones for his slingshot when he confronted Goliath. David cut off Goliath’s head and carried it to Jerusalem; he hung Goliath’s weapons in his own tent (1 Samuel 17:51, 53). this is only my opinion, but I sometimes wonder if God used just that one stone to kill goliath, to show david and the others of his great power. David chose to obey God, despite what others thought, and I think maybe God allowed goliath to die from the first stone to acknowlege david's obedience.
