Second gear is the first gear to go bad on bikes.
Can you hear the gears grinding when the bike jerks? That's a sure sign.

Does it seem engine/running related or transmission/drive train related. I suspect that you may have a slightly bent shift fork in the transmission, the one that moves the second gear. If so what is happening is that the bent or worn shift fork doesn't move the gear quite close enough to the next gear (gear dog engagement should be at least 50%). When you open the throttle and put the power to it the gear dogs slip/jump making your bike feel jerky. IF this is the problem it will keep getting worse every time you make it happen and the only cure is to replace the worn parts. Yes, it is a big expensive job. It could be something else of course, its hard to diagnose from an email. Take it to a shop and let an experienced mechanic take it for a ride.

850 had a mod on 2nd but it sounds like its broken. have to get inside engine to check. probably need 2/5th gear and gear selector
If you cant do it yourself its probably not worth paying a shop, just dropping engine out and removing bottom case is going to take a couple of hours before you put any parts in or re-build.
Depends what its worth to you
If it were mine I'd re-build it, but I have over 38 yrs experience
