Wearing clothes traps layers of warm air against the skin. Multiple layers of clothes means multiple layers of insulating warm air, therefore it keeps you warmer.

I like to wear layers in the winter rather than one big coat because I won't get overheated if I can peal off the layers as I warm up indoors

The more layers you wear the more heat is held in-between the layers. (hence your core temperature is maintained better)
Plus you can always take layers off if you become too hot... whereas if all you have on is a thick jacket you take away that "adjustability" of your temperature.

Air layering
The air is being trapped within the fabric and between the layers. Air is the best insulator you can have (naturally speaking), however make sure you don't get wet (sweat or external moisture) since water is the best thermal conductor (naturally speaking) and that makes it a poor insulator.

Layers are better because they trap your body heat in better and they are also convenient because if you get to hot you can take something off

yes air gets trapped between each layer and becomes warm hence warming you better than one thick layer

Dressing in layers provides optimal comfort....we dont stand outside in the cold all day!
