Supposedly because it's difficult to digest. The activity in the digestive system stops you sleeping deeply and provokes activity in the brain.

It doesn't well no more than a lot of foods; millions of french eat cheese late at night after their main meal and they never complain. I'm not french but have done the same and not dreamt overly much. Much of this is to do with the digestive processes keeping you system fairly active whilst sleeping, keeping you in a light sleep where you remember your dreams its usually best to eat light food if before bed if you must eat at all, this way its easily digested and the active system slows down more quickly allowing you to go into deep sleep when you don't remember dreams

A university did research on cheese and their effects on dreams last year, apparently different cheeses give you different dreams and some cause nightmares so they say.

I've been told so many things about what foods make you dream or other foods that give you nightmares, I just don't know if I believe it. I've been told not to eat before I go to sleep or I'll have nightmares. Well, I've eaten and not eaten and I still have nightmares no matter what I do.

I think most dairy products make you have wierd, vivid dreams.
The reason for this is that your body can't easily digest dairy products so when you are asleep your dreams are usually connected to the fact that your body is trying to digest something processed (like cheese or ice cream etc)

every single human being dreams according to science.. infact we get more than a million in one dreams every night.. it's just down to the case of which one we do remember & which ones we dont.. some affect us in negative or positive ways, some don't.. some think it's a warning some think they're mere "brain rubbish".. but going back to science & summarizing it, dreaming is our brain's way of keeping itself working & since our bodies are resting, the brain is more conscious about the sub-conscious department of it.. dreams aren't induced by food, it is usually fueled by memories, ideas or sometimes in my case (i sleep with half-opened eyes) i see things while i'm asleep.. but i'd really wouldn't mind dreaming of a huge roast pork everynight..lol ~~~~~~~ if cheese gives you weird dreams at night, why do people suggest a warm glass of milk before bedtime to make your sleep smoother?

Mugwort is supposed to increase your dream awareness and Edgar Allen Poe ate raw meat before going to bed as he hoped it would give him weird dreams to write stories from.

Perhaps it contains hallucinogenic substances...
Eating rich, fatty food before bedtime may cause indigestion, which in turn cuses nightmares - that's the semi-scientific explanation.
