Sounds novel. Check out your competition. See if there are other cake shops, Breadtalk-like bakeries, fruit juice vendors. Check out the mix of stores in food court. It is common to find a juice stall there. After sizing up your competition, choose a location that your target crowd is likely to pass by.

If your target is children and young adults, the place you have in mind should have sufficient number of such crowd. Students like to flock at 'happening' places. Or even bookstores like Popular bookstore. Set up shop nearby.

Pricing is a crucial factor in neighborhood malls. People look for bargains, because if they are that willing to pay, they would rather go to Orchard, Suntec area. If you are unsure, try out the push carts first. Rental is lower and contract term is shorter. Use that to gauge response before you throw money into a bigger venture.

Creativity is everything. If you cannot differentiate your product, once you do well, other people will jump onto the bandwagon, and you will lose market share. Good luck!

Usually in a mall to set up shop is very expensive. It's something new so sure it will, but when someone gets your idea they may copy it and maybe do something different and take away your clientell. Make sure your ideas are patented. I've never heard of that in a mall. YOu should do well.
