The best answer I can give you is that they aren't, in fact, bodies, but plaster casts of voids left in the lava where bodies decomposed.

There were no actual bodies found at Pompeii. When the pyroclastic flow raced down the side of the volcano and overran Pompeii the temperature of the ash was hotter than a kitchen oven on high heat. The people caught in the streets were killed instantly and covered with ash completely. When the city was rediscovered it was found that after the bodies had decomposed within the now hardened ash the place where the body had been was a void in the ash. The poured in plaster and a lifelike cast of the dead was revealed. For a long time it was thought that few people had died in Pompeii but within the last few decades an area was found in the area that was the original harbor area of the city where hundred had fled to and died there.
