"Dragon Slayer's" I believe orginated from "Saint George" supposedly the "first" of the dragon slayers. The story has it that Saint George was a symbol of the Catholic Faith, a knight for eliminating "evil" in the world. He was a fighter as well as a saint. Now Saint George before he earned the title of "saint" was a Roman Calvary Officer and a Christian. He decided to go to a village called "Cappadocia" in which they were sacraficing the villagers sheep for keeping the dragon happy but this procedure didn't last too long. So they decided to take the "virgin" princess instead for a sacrafice. This is where George stepped in and killed the dragon to save the princess from the dragons breath.Others followed George's footsteps. One dragon slayer in Greek mythology was "Hercules". He fought the dragon that was protecting Hera's "golden apples". Another dragon slayer was Saint Clement but I'm not to sure what or how many dragon's he slaughtered. So I imagine after George became known as a "dragon slayer" others wanted to follow to possibly gain respect and for fame not to mention the rewards that followed after slaying of a dragon...lol.

before Saint George (the Dragon Slayer) there was Sigurd. (As Siegfried, he is the hero in the German Nibelungenlied. you may know this as Richard Wagner's operas Siegfried and Götterdämmerung better known in america as the Rings Trilogy),. Sigurd agrees to kill Fafnir (a dwarf), who has turned himself into a dragon in order to be better able to guard [a stash of] gold.

go read the quicky wiki version at http://en.wikipedia.org/wiki/Sigurd

For the whys and wherefores may i suggest you go do some additional reading, a good place to start is The Power of Myth by Joseph Campbell.
