Well for starters, some Latinas are white. For example, people from Spain are spanish speaking Europeans and are therefore white Latinas becuase they are white people who speak a latin language.
Now if you are asking why non-european Latinas of color try to act white that's another story. All women of color i.e. African, Asian, Latina and Middle-Eastern women, especially those in America, are constantly exposed to white standards of beauty in magazines, tv, and movies. Women in American, even those who are not white, are judged by those standards of beauty and want to come as close to those images as possible.

Because most latinas are indigenous-looking with dark skin hair and eyes...while white girls are the opposite-light hair skin and eyes..whiteness is a beauty standard in latin america, so they try to imitate the images they see on tv and in their media because they are not happy with how they look naturally and they deny their indian heritage...in mexico if you call someone an "indio" or "indian" it is an insult.latinos are a mix of european and indian (NOT to be confused with U.S. Indian), but most latinos tend to look more indian, latinos do have a small percentage of european blood in them but its not enough to be considered "white".

EXCUSE ME!
I am a latina myself, and i have Never, nor will i ever try to look like something i'm not. Why would i try to change my latin image? I LOVE my latin roots and i love everything that comes with being Latina. I'm very proud to call myself a Latina.

Why would we want to? Uhh yeah, you might have blonde hair and blue eyes, Sweetgirl & Peaches, but that is NOT what guys like these days. They like exotic looking girls, like um, Latinas maybe?

Im a proud LATINA and i would never try to be like any other race. I love my carmel skin color, my long curly black hair. Why would I want to turn myself into something that wants to be like me. I dont have to tan, i dont have to curl my long thick hair. We have butts, we have some nice curves...Why would I want to give all of that to look like an iron board with thin hair. Never in a million years would I want to change the person I am.

some latinas can be white, depending of their background, white girls can be fat, skinny, tall, short, blue,green,black eyed, dont understand your question. Most of USA population are fat so i dont think foreigners girls can look like them, use some examples
