The intro song is "Battlecry" by Nujabes feat. Shing02, and the ending song for most of the episodes is "Shiki No Uta" by Nujabes feat. Minmi. Both songs are on the Samurai Champloo OST "Departure." *

*Note - Officially, there are four soundtracks in all:

"Departure" by Nujabes and Fat Jon
"Impression" by Nujabes, Force of Nature and Fat Jon
"Masta" by Tsuchie and Force of Nature
"Playlist" by Tsuchie and Fat Jon

There's also a fifth soundtrack, "Katana," which is essentially a compilation of tracks from the four Japanese OSTs made for American release.
