I have the opportunity to take an advanced spanish class at my college. What's cool is that it would be an independent study, meaning just the professor and myself. What's even cooler is that there was the mentioned possibility of being able to PICK a novel to read. So, anyone have any suggestions? It has to be in Spanish.

Also, I already know of Isabel Allende, so let's be creative, people!!! :)

Well, the original Zorro books were written by an American, pulp writer Johnston McCulley, so I don't know that any were ever translated into Spanish. I vaguely remember some Spanish speakers weren't exactly enamoured of the character and the way the culture was depicted. Allende may be your only choice.
