Sodium, a component of salt, helps regulate the movement of water through the cell walls of your body. Depending on the difference in salt content on each side of a cell wall, will determine which way the water passes, and how much will pass. Without salt (sodium/chloride) we wouldn't be able to keep water balanced in our bodies. We would quickly either dry up or bloat until we exploded.

Sodium is one of those things your body has to have to carry out normal functions, but if you have to much it could hurt you. so they have to tell you how much sodium is in a food so you can assure you are not getting too much.
