If her irregular cycle isn't due to another health problem like thyroid issues or PCOS (polycystic ovarian syndrome) then using ovulation predictor kits and monitoring fertility signs may help. Ovulation kits are available in most drug stores with the pregnancy tests. They look for a surge in LH (lutenizing hormone) which is part of the signal to release an egg. Each day, at about the same time, you can use the OPK like you would a pregnancy test, and interpret the results according to the directions for that particular brand. With an irregular cycle, you generally use the shortest cycle in the last six months when determining when to begin testing. You continue testing each day until you see an LH surge on the test.
She may also want to chart fertility signs-cervical position/texture, cervical mucous and basal body temperature. This is a bit harder with an irregular cycle, but it may tell you whether or not she is ovulating. If she's not ovulating, that may indicate another problem, but is certainly worth seeing a health care provider about-without ovulation, you can't get pregnant. Basal body temperature will signal that she already has ovulated, so using that in conjunction with OPKs can help tell you whether she's ovulating and what symptoms to look for to help you know when she is ovulating.
She may, however, want to talk to her health care provider about whether or not the irregular cycles indicate another problem.

Go to http://www.mymonthlycycles.com and put in your period info and it will calculate when you will be fertile and ovulating plus it keeps tracks of your periods. It will even email you ahead of time to alert you of your upcoming fertile/ovulation and period dates. It is a free and very helpful website.

It's really tough to do this, but you can buy kits that help you figure out when she's supposed to be able to conceive.

best bet is to have sex every 3 days, you wont deplete your sperm count and more than likely you will hit a fertile time
