Use a computerized Point of Sale system and have them sign in with a number or password. That way, you can have them count out after their shift, and then track what should have been made during each shift. I also suggest a more rigorous screening process for employees. People tend to hire anyone off the street in retail and food service without checking references or asking many questions.

Keep a camera on the registers at all times.
Make sure the cashier counts the money when her shift is up.
Keep very little money in the drawer , if checks need cashin, call manager only.

Put up security cameras that will view from several different angles. And try not to let the camera be seen or known. You can discuss this with whom you are buying it from.

the drawer must always be counted ,everyone who uses the drawer would have to ck in and ck out with there personal code every time they use it. x out your register and count money every shft change
