Use a computerized Point of Sale system and have them sign in with a number or password. That way, you can have them count out after their shift, and then track what should have been made during each shift. I also suggest a more rigorous screening process for employees. People tend to hire anyone off the street in retail and food service without checking references or asking many questions.

Keep a camera on the registers at all times.
Make sure the cashier counts the money when her shift is up.
Keep very little money in the drawer , if checks need cashin, call manager only.

CUNCOURT.COM ---- CHARGE THEFT....

BY ROUNTINELY CLOSING OUT CASH REGISTERS AND BALANCING CASH DRAWERS UNANNOUNCED...

SALTING REGISTERS--ADDING EXTRA TO START THE TILL
IF 100.00 CHANGE TO START SALT WITH AN EXTRA MARKED 20.00 TO SEE IF EMPLOYEE IS HONEST ENOUGH TO BRING IT UP WHEN THEY DO FIRST DRAWER COUNT OR JUST POCKET THAT 20.00....

ANOTHER WAY IS THEY RING UP FRIENDS BUT DON'T CHARGE FOR HIGH DOLLAR ITEMS.....
HAVE TO WATCH PERSON AS THEY TAKE ITEMS TO REGISTER AND COUNT NUMBER ESP HIGH DOLLARS ITEMS
AND CHECK REGISTER TAPE AGAINST YOUR LIST.....TO SEE IF THOSE ITEMS APPEAR...CASHIER UNDERRINGS THEIR FRIENDS...MOST COMMON METHOD OF EMPLOYEE THEFT AND HARD TO CATCH.

ALSO BY PURCHASING ONE ITEM AMD MAYBE GETTING TWO MORE AT NO CHARGE (SAY BLUE JEANS) THEY CAN RETURN THE PAIR THEY ACTUALLY BOUGHT FOR CASH AND STILL HAVE TWO PAIR...(NO CHARGE) AND POSSIBLE RETURN THE OTHER TWO PAIR TO ANOTHER STORE AND GET CASH ALSO...

HOW TO STOP CASHIER FROM POCKETING MONEY..

BALANCE/COUNT TILLS OFTEN AND UNANNOUCED..

SALT TILL WITH EXTRA START UP MONEY--HONEST OR NOT??

LEARN YOUR CUSTOMERS AND CASHIERS CUSTOMERS..

KEEP SHARP CHECK ON INVENTORY...WHAT ARE THE MAJOR MISSING ITEMS....

GOING OUT THE FRONT DOOR OR BACK...

AND IS CASH THE MAJOR PROBLEM..

DON'T LET CASHIERS HANDLE SAME TILL...ALWAYS CLOSE OOUT.. ALWAYS ONE CASHIER PER DRAWER...

AND ABOVE ALL-BE CAREFUL WHO YOU HIRE........
CALL AND CHECK THOSE REFERENCES...
DON'T HIRE ANOTHER HEADACHE...

Put up security cameras that will view from several different angles. And try not to let the camera be seen or known. You can discuss this with whom you are buying it from.

Pay them better. Check references and hire people with a proven track record.
