I am not sure. Whether or not to use cold water is up to you. Cold water uses less energy than hot water. I use cold water most of the time for rinsing my dishes. Hot water gets syrup off the plates easier. When I am cleaning my dishes I use hot water.

the real reason why the machines are programmed to rinse in hot water is because of the bacterial effect. Hot water kills quite a lot of germs, and if u use cold water, the dishes, should you test them will have quite a lot of bacterial strains on them.
In restuarants, they have to use a bleach tablet, and or Clorox bleach to add to the rinsing water,, just to sanitize the dishes
