soluble. I think that is the answer you are looking for. As mentioned above amalgam is made from a mix of metals and includes mercury (very bad and can dissolve over time). Basically, gold does not dissolve and neither does porcelain. So I think to fill in your answer it is probably solubility.

The old dental fillings were made of a substance called amalgam that contains nickel, copper, mercury, and a bunch of other materials. Those are the grayish-black fillings that you see a lot, especially in older people. They're becoming outdated because they break down over time, they allow for continued tooth decay and they release mercury into the patient's system. Newer fillings are made from a porcelain composite. They're white and blend well with the teeth, it's generally hard to tell there's even a filling there at first glance. They're much better for your teeth since they actually checmically bond with your teeth rather than just sitting in them like amalagams do, they last longer than the older versions and they help prevent further decay.
