I'm a singer and I used to ask myself this question. The truth is, it's something you learn with experience. When you have sang with many choruses and choirs and won some awards, you KNOW some singing. You will be able to tell who is truly using techniques and who is simply shouting into a microphone.
However, with this there is a little but of gray area. I personally like jazz and R&B. So therefore, as objective as I try to be I probably will say that an R&B singer is better, unless there is an obvious difference. This explains how Simon can say someone stinks, while Paula and Randy love them. It's all a matter of preference mixed with good judgement.

"Pitchy" means the singer is not staying on key-- that is, they're singing the wrong notes in parts either flat or sharp.
Good singers--
- Stay on key
- Carry a tune well
- Know when and how much to embellish (if at all)
- Can get the crowd energized and into the performance/song.
American Idol suck by the way. Its jumped the shark. Btw-- I heard view a few folks who know somebody on the show that they had already picked the top 10 or 12. The votes on the last few shows meant nothing, they were previously taped.

Pitchy means they didn't hit the right notes, Sharp means too high and Flat is too low. Also there is tone quality, you want it to be strong and rich. A dark tone is good, while an example of a bright tone is the guy who sang Time after Time last night.
An easy way to learn would be to join a choir and learn how to sing yourself. Once you know how to sing it's a lot easier to tell.

well first,
if glass breaks.
you cant sing.
pitchy is talking about the tone of the voice,
the tone is like the quality of the voice.
so if your tone is not good,
you're pitchy.
you need to be able to have breath support,
helps make a great singer.
you also needed to be able to hit the notes,
dont go out of your comfort zone.
hope this helps a bit!
