Mad Max Beyond Thunderdome.
The scene where Mel Gibson and all of the kids are trying to take off in the rickety little airplane, and the pilot turns to Mel as Mad Max and says "Not enough runway" as the vehicles of Tina Turner's mob approach.
Reason: I'm a pilot and this scene is the best I've ever seen of a pilot trying to explain to a non-pilot that something just can't be done, no matter how bad you want to do it.

From The Movie the Princess bride:
"My name is Indigo Montoya you killed my father prepare to die."
The movie is fab and the when Indigo finds the six fingered man and says the above quote over and over funny espescially when the six fingered man says "stop say that" and Indigo keeps saying it while going to sword fight him and six fingered man runs away. Very funny if havn't go rent or buy the movie has everything for any type and age of person.

"I remember one morning getting up at dawn, there was such a sense of possibility. You know, that feeling? And I remember thinking to myself: So, this is the beginning of happiness. This is where it starts. And of course there will always be more. It never occurred to me it wasn't the beginning. It *was* happiness. It was the moment. Right then."
From 'The Hours.'
It kills me. So true - just enjoy every moment while it lasts. It also helps that Meryl Streep is just...divine.

Jules: The path of the righteous man is beset on all sides by the iniquities of the selfish and the tyranny of evil men. Blessed is he, who in the name of charity and good will, shepherds the weak through the valley of darkness, for he is truly his brother's keeper and the finder of lost children. And I will strike down upon thee with great vengeance and furious anger those who would attempt to poison and destroy my brothers. And you will know my name is the Lord when I lay my vengeance upon thee.
From pulp fiction........the reason just loved sam j jackson and john travolta in it!!!!!!!!!!

I think in all fairness, I should explain to you exactly what it is that I do. For instance tomorrow morning ill get up nice and early, take a walk down over to the bank and... walk in and see and uh... if you don't have my money for me, I'll... crack your fuckin' head wide-open in front of everybody in the bank. And just about the time that I'm comin' out of jail, hopefully, you'll be coming out of your coma. And guess what? I'll split your fuckin' head open again. 'Cause I'm fuckin' stupid. I don't give a **** about jail. That's my business. That's what I do. Joe Pesci as Nicky Santoro in Casino

"It's better to be cool and dead, and alive and uncool." From Harley Davison and the Malboro Man - quality sentiment perfectly delivered.
Failing that, "we need a bigger boat" from Jaws has to be one of the greatest cinematic understatements of all time.
- good question, would like to see what other people say ;-)
