pitchfork is slightly radiused and can be used for picking up hay. Tridents have barbed tines, and aren't good for hay because they don't release the hay. Both usually have 3 tines.

Dungforks have multiple tines and are for manure.

Technically, a trident has a straight line across the top of the rod where the three prongs are. That makes it easy to use as a weapon.

A pitchfork has a line as well with three prongs, but the line is bent, which makes it easier to use to pick up hay or kill Frankenstein.
