Most of the animal breeds which have been domesticated for use as food would die back to a fraction of their current numbers, but none would become extinct, if that's what you're concerned about.
There's no need to justify keeping animals for food; humans are omnivores, and need animal, fish and fowl protein to develop soundly and remain healthy. It is the basic rule of our world that all living things take from other living things, either currently alive, recently alive, or long dead, to survive and reproduce.
Since this is inescapable, the most we can do is be 'humane' in how we treat all animals and plants, whether for food, companionship or decoration.

There are any number of animal species have benefited immensely from the expansion and success of human beings. Many of these species would at least see their numbers drastically reduced, if not totally eliminated should man be removed from the environment.
In addition to the obvious ones like domestic animals (the wild ancestors of critters like horses and cows are already extinct, or nearly so), there are a lot of less obvious ones like pigeons, rats, American and German cockroaches, mice, house sparrows, and even things like coyotes, raccoons, opossums and magpies. They've all increased their ranges and numbers by adapting to live in the kind of ecosystems we create.
There are also species like head lice and public lice that pretty much depend on humans and humans alone for their survival - they'd definitely get wiped out if we disappeared.
Some people may not miss rats, cockroaches, and crotch crabs, but they're critters too, and just as much a part of the biosphere as tigers and rhinos and pretty butterflies.
Going vegan definitely wouldn't help the animals either. It would mean there would be a lot fewer domestic animals (cows, pigs, sheep, etc.) - which wouldn't be good for those species. It would also mean there would be a lot fewer critters like songbirds, voles, weasels, hawks, and deer that live in the lands that would need to be converted to farmland to grow all those 'animal friendly' soybeans and lentils.
The increased fertilizers needed to sustain those crops would get into lakes, rivers and streams, creating algal blooms that would choke out more fish, frogs and aquatic invertebrates, reducing those numbers as well.
The huge mono-culture fields would also promote outbreaks of the pest species that attack those crops, prompting the use of more pesticides, which could lead to more problems for those animals 'roaming about as free spirits'.
In all, I'd say that the whole country going vegan would be the worst possible thing that could happen to the animals.

We have all been programmed to think that only in the time of modern man have animal species become extinct. Not so. This selection process has been going on since before the first creature slithered on to dry land. It will continue forever or as long as there are animals in existence. Man may have a hand in how long that may be.
Some animals as we know them today would probably cease to exist if not required for a food or other resource.

if all animals where left to roam? interesting question - -- does that include cats and dogs and other pets? -- wonder what would happen ?-- all those dogs and cats breeding like crazy -- becoming feral -- would be a scary world -- wonder if any songbirds would be left (stray cats eat a lot of songbirds already) -- rabies would go crazy in the dog packs --of course they would need a lot of meat probably would kill all the cows and deer or just about any animal they could -- should they open the doors to all the Zoos also? -- that would be interesting -- Tigers and Lions and Bears -- Oh My

well cows need man to milk them or they die. so if man left cows to themselves they would all die if not milked. and it isn't a pretty death. of course there is the thinking the circle of life so things have a way of taking care of them selves. of course some of the animals may see man as food. so then what happens.. but in reality it won't happen..
