Rubber binds better but can tar and rot quicker. The next time you change your faucet, you'll notice gunky black rings in there. This can also be a problem if the rubber ones are rotten that they leak into the pipe and change the taste of the water. Ceramic ones are naturally not as good at sealing tight water, but they also don't degrade over time. I never had any problems with ceramic ones leaking though..
I'd suggest you base your choice on the commitment you have to the faucet in question. If you intend to stay in this home for 20 years or more, then go ceramic to save you the chore of changing the washers out later. If you're in a place you're likely to move out of in the next 8-10 years or REALLY fear leaking, go rubber. They'll last at least that long. Honestly too, most people replace their faucets at regular intervals of a decade or so... so a rubber one hopefully wont gunk up all that badly... and even if it does, just take a towel and wipe the gunk off. It's not like it's dangerous.
I'm lazy, so I just use whatever comes with the faucet ;)
Note: the other guy mentioned plastic. I never tried it, but that should work. It doesnt rot and it can be a good sealant.

Modern rubber washers are not really rubber but a composite mix so they don't rot or tear, red washers are used for hot water taps but can also be used on the cold taps, ceramic washers are OK for taps that were originally fit with them but don't really suit some other types, so stick to the rubber type.

Taps that use the good old fashioned rubber or neoprene washers every time. Taps with ceramic discs always drip in time, usually from a build up of limescale/grit damaging the surfaces. Tap washers easy to find when they need replacing. ceramic discs nigh on impossible.
