My friend and I have hung out over 20 years together, before he even got married and had children. We do a lot of things together and I often go with them and their kids. I am like an uncle to them, but sometimes I just want to hang out with my buddy. I am divorced and don't have children. I do have a girlfriend, but she works for my friend's wife and they aren't close. Is it wrong to just want to go fishing or something with my bud?

It is not wrong to want that. I wish I knew what to tell you but I'm in the same boat! Not that I want to go fishing with my friend but just to hang out and do adult things for a few hours would be nice.

No, it's not wrong. Sometimes parents/guardians just need a break from taking care of kids. If you can't have your girlfriend or your friend's wife take care of the kids while you and your buddy go out, then your best bet is to hire a babysitter. If you don't want to, then you're just going to either have to take the kids with you, or not go at all. If the kids come with you, maybe you can teach the kids how to fish if they don't know how.
