The sources at the bottom will have some useful information, but I don't know how much detail you need. The details of dog training programs are proprietary to the training centers.

In general, dogs learn most effectively through positive reinforcement: the correct reaction to a situation leads to a reward. Using this learning technique, the dog views the task as a game, as they will always get a prize for doing something correctly. There are few other animals in the world that demonstrate this unique learning ability.

With their acute sense of smell, dogs are able to discern the slightest of odors, even when strongly masked by other odors. In general, the dog would start with being rewarded for smelling and being taught to react (barking, sitting, etc.) to the substance in question. Over time, the odor of the substance would be masked, with the dog only rewarded when he/she demonstrates the correct action when successfully smelling the substance. Additional samples are introduced, from which the dog must smell and react correctly when the correct sample is located.

they get the dogs addicted to substances like cocaine and marijuanna
or at least give them a little .after that the dog always finds it
know of people who gave marijuana to the dogs for fun ,but then did not laugh so much when the dogs uncovered their stash and ate it all.
animals love marujana ,like rats, cats ,pigs, dogs etc.

one guy hid his dope in the lampshade (because of the dog)and when the cops visited the barking and jumping dog underneath the lamp snitched on his boss.

guns and expolsives have very distinct smells ,and it is easy to train dogs to look for this by rewarding them when you play hide and seek with these items.

Pavlov wrote the book on this one--they are given treats when they perform the task desired.

Dr. Lamaze, interestingly enough, used Pavlov's methodology with dogs to help women give birth without drugs. I must say it works; I used it myself during labor and delivery.

Here is one place where they are training dogs to smell out cancer cells:

Another about drugs:
"Trainers begin by scenting towels with narcotics odors and having the dogs retrieve them. Eventually, they begin to place the odor in sealed containers, and train the dogs to seek it out. Advanced training includes work on conveyor belts. "
