Mardi Gras is over. Been over for a week now...It's a great theme though. You need beads, and trinkets to throw. You can give out cheap masks or have them arrive with costumes. Have a costume contest. Put on Mardi Gras music. Lots of drinks. A must have is a king cake with the baby.

My best Mardi Gras recipe is Crawfish Beignets - I got the recipe from Emerils. Best done in a deep fryer, although you can also cook them in a sauce pan in hot oil. They are lovely light dippers, a little spicy, great served with a remoulade dip made with catsup and mayonnaise and Tabasco sauce. If you have the inclination/patience, you should also try your hand at home-made pecan pralines or bourbon balls, and make a king cake (you can get king cakes by mail order).

You can buy ready-made Mardi Gras decorations, including tablecloths and napkins. I hang up green or purple foil "curtains" and with foil letters spell out "Happy Mardi Gras". Also, green, purple and gold or yellow balloons. Get masks (and beads if you can) at a party store and give them out to your guests as they arrive. Other good party food is a shrimp platter, cajun chicken goujons (strips or on wooden skewers), "dirty" rice or "calypso" rice, red bean chili, or of course the more traditional fare like etouffee, gumbo and jambalaya. Mint juleps and Hurricanes are the drinks of choice - you can mix up a batch of Hurricanes and serve as a punch in a big bowl.

Have your guests vote for King and Queen and have prizes for them. Get some Dr John, Professor Longhair and other New Orleans music.

Since fat tuesday was 2/20/07 and Ash wednesday was 2/21/07, I suggest you plan it for next year.
