The countable noun (Nc) is used for things which usually have clear boundary in meaning and so can be counted. The uncountable noun (Nu) has no concrete boundary in meaning and so cannnot be counted.
A waltz has exactly 3 beats per measure, therefore, it is countable because no matter what waltz you listen to, the 3 beats rule remains the same. Though a waltz is a song, it is still considered a thing, not a concept or idea. Plus if you say you will listen to "a waltz" within your sentence, you are quantifying because "a" means "one" waltz.

Countable are nouns that can be counted, like people, things, etc.
So waltz can becountable, (like, "we performed 13 waltzes")
Uncountable nouns are always singular
