x - (√7)/8 = 2

Multiply both sides by 8:
8x - √7 = 16

Add √7 to each side:
8x = 16 + √7

Divide each side by 8 to isolate x:
x = (16 + √7)/8

To check, plug your answer back in and do the subtraction:
(16 + √7)/8 - [√7/8] ?= 2

Split the first term into 2 separate terms:
[16/8] + [√7/8] - [√7/8] ?= 2

The terms involving the 7/8 add to zero, thus:
16/8 ?= 2

2 = 2 QED

I think your number is 263.

It helps to do some "grouping" within your problem statement:

One eighth of [a square root of (7 less than a number)] is 2.

Letting x be the number you're looking for...

(1/8) [sqrt (x-7)] = 2 is the equation to solve

cking: x-7 = 256
sqrt(256) = 16
1/8 of 16 does = 2

AND YES, an alternative reading of your problem could be
One eighth of [ (a square root of 7) less than a number] is 2

then (1/8) [x - sqrt(7)] = 2 in which case your answer ends up

16 + sqrt(7)=about 18.6

Let the number be x
1/8*sqrt(x-7)=2
1/64(x-7)=4 [squaring both sides]
x-7=256 [multiplying both sides by 64]
x=256+7=263
Checking
263-7=256
sqrt of 256=16
1/8th of 16=2

(1/8) * square_root( x - 7 ) = 2

"and how do i check it?"
You are converting a word problem into algebra. The only way to check the answer is to work it out. Plug the number into the equation.

1 / 8 * [(7)^1/2]

= 1 / 8 * (2.6457513110645905905016157536393)

= 0.33071891388307382381270196920491

let x be the number
x-(sqrt7)/8=2
x = 2+ (sqrt7)/8
x = 2.33

to check, put the value of x into the equation:
2.33 -(sqrt7/8) =
2.33 -(2.65/8) =
2.33 - .33 =2 checks
